If you like cooking shrimp recipes, you should really try this one as it will only take you ten minutes to make; as you can see, it is easy to make your own version of this classic Thai street food. Better still, this version is low in fat. Use raw shrimp if you can as they will add masses more flavor than ready cooked ones.
For this delicious shrimp recipe you will need the following ingredients:
200g raw peeled shrimp
1 small pack of fresh coriander stalks finely chopped, leaves, roughly chopped
2 x 200g packs straight to wok pad Thai noodles
85g beansprouts
1 egg, beaten
Juice of 1 lime, plus wedges to serve
1 tbsp fish sauce
2 tsp sugar
1 tbsp roasted peanuts, roughly chopped, to serve
First, dry fry the shrimp and coriander stalks in a non-stick frying pan for one or two minutes roughly until the shrimp are just pink. This is very important as if you overcook your shrimp it turns rubbery and all the juices will be lost. Next, add the noodles, beansprouts, egg, lime juice, fish sauce and sugar. Quickly toss together for one minute more until the egg is just cooked and everything is well mixed (you might want to use a pair of tongs to make this easier).
Remove from the heat, mix in most of the coriander leaves, then divide between two bowls. Scatter with the remaining coriander and the peanuts, and serve with lime wedges for squeezing over.
Shrimp recipes are usually low in calories. This particular one has around 500 k-calories which is great as it is also really tasty.
